Who doesn’t love strawberry cakes? It can be light and so refreshing on a hot summer/spring day. I invented this cake for one very special occasion. It was my dad’s birthday! I wanted to make something chocolate, creamy but at the same time refreshing, so I combine chocolate, vanilla and fruit. That is a combination that everybody love. I wasn’t sure what I will get at the end, but according to the reactions of others, I got a real paradise for the palate.
Ingredients:
Layer1 4 eggs
130g butter
230g sugar
100g dark chocolate
100g roasted almonds
Layer2 400ml milk
2 tbsp sugar
40g vanilla pudding
Layer3 400ml water
2-3 tbsp sugar
2 tbsp gelatin
600g strawberries +200g for decoration
Method:
Layer1
Separate egg whites from egg yolks. Whip the egg whites and leave it for later. Mix butter and sugar. Then add egg yolks, ground chocolate, ground roasted almonds and lemon zest. Mix all ingredients and add the egg whites. Stir it with a spoon until you get a creamy filling. For this recipe is very important to have baking pan with removable edges. If you don’t have it, improvise with what you have. Grease the pan with butter, then sprinkle it with a cocoa powder. Put the Layer1 mass in a baking pan and bake for 1h at 200ºC.
Layer2
Layer2 is actually vanilla pudding. Heat the milk and sugar, then add pudding powder and stir until it get thicken. Put it over Layer1 until it is still hot, and leave it for a few hours in a fridge, until it get hard and cold.
Layer3
Strawberry layer or the last one is very simple to make. You have to heat water and sugar, add gelatine and strawberries and stir until it starting thicken. You can use vanilla pudding powder instead gelatin, the result is sometimes even better. Put the layer3 over the layer2 and decorate it until it is hot. Leave it for a few hours in a fridge, or until get hard.
