Savory muffins

This is the perfect recipe for those mornings when you don’t have bread in the kitchen, and everyone is hungry and you need a solution quickly! In addition to thick pancakes, as I call them, and cornbread, these savory muffins are one of the very common recipes I make just when I need a solution for breakfast or dinner for the whole family! It’s very similar to cornbread, and what’s a great thing is that you can put whatever you want in them! Seeds, olives, ham, tomatoes, …. whatever comes to your mind and what you like.

I also put substitutes for dairy and meat products in the recipe, so this recipe can be adapted to other diets.

Yields1 Serving

 2 eggs
 100 g feta cheese (plant or animal origin)
 100 g Ham or eggplant cutted in a cubes
 100 ml milk (plant or animal origin)
 1 grated carrot (around 50g)
 1 package of baking powder
 1 pinch of salt
 50 g cornmeal
 80 g gluten free Schar Mix B flour
 20 g gluten free oat flakes
 50 ml natural oil

- Put all the ingredients in a bowl and mix well. Using the spoon add the mixture into the muffin tins.
- From above, you can sprinkle with sesame, sunflower, flax, pumpkin, and other seeds, and for meat lovers, it is a warm recommendation to chop a little bacon, which will become crispy when baked.
- Bake the muffins at 220ºC for 25 minutes.

Serve savory muffins with fresh vegetables, yogurt or simply eat them like that! They are excellent as a quick snack, but also as an addition to meals instead of bread.
