If you like peanuts, you are going to love these crackers!
First, I would like to share some interesting facts about this amazing plant. While it has nuts in the name, peanuts are actually legumes, and like beans and peas, belong to the single plant family, Leguminosae. They grow underground, like potato, which is opposed to nuts like walnuts, almonds, hazelnuts … that grow on trees.
Peanuts are rich in energy and contain health benefiting nutrients, minerals, antioxidants and vitamins that are essential for optimum health.
I love to eat peanuts with almost everything! Vegetables, meat, sauces, creams, cookies … it goes perfectly with all these foods. That’s why I came to the idea to make something salty, easy to bring in bag, tasty and rich in energy. Eating the same breakfast every day is not in my style, so I am trying to make every morning different. While I go to work early in the morning, sometimes I don’t have time to make spectacular breakfast. These crackers you can make the day before, and only thing you have to do in the morning is to buy a yogurt on your way to work.
Ingredients:
200g ground peanuts (I use salted peanuts, otherwise you will need to add 1 tsp salt)
1 tbsp lard, but if you don’t like it, you can replace it with butter
100ml yogurt
1 egg
1 tsp baking powder
5 to 6 tbsp bread mix, gluten free flour (in the following video you can see what kind of dough structure you have to get)
As you can notice, I decorated crackers with sour cream and rosemary. Sour cream is light and the rosemary brings some refreshment note. Of course, these two are additional aromas which you can avoid according to your taste.
