Muffins are always a good choise when we are talking about sweets. They are great for any occasion.. picnic, kids birthday, wedding, school break … They are decorative and delicious and great fun in the kitchen. It tooks me quite long to create right recipe, to find perfect combination of ingredients and their amounts. I think that my husband won’t eat muffins ever again, given how much he ate them until I found the right measure! Not every gluten-free flour is the same, so it’s very important to know how the flour you use is acting. This time, I used a new Mix B flour from Schär.
Muffins dough:
400g Schär Mix B flour
100g brown sugar
1 tsp baking powder
1/2 tsp baking soda
pinch of salt
2 eggs
200ml sunflower oil
400ml milk
1 tsp vanilla extract (optional)
First mix all dry ingredients, then mix all liquids and after mix everything together. Take the batter with the spoon and place into a muffin moulds. Bake it 30 minutes at 210ºC.
This is base for the muffins. If you want to rich the taste, here are some of really great combinations that you can try: cocoa and chocolate, cinnamon and apple, raisins and rum, white chocolate and roasted almonds, lemon and lime peal.
