Floating islands

If you find yourself in France, from where this recipe comes from, and you want to eat a Floating islands, you will order œufs à la neige, while in Belgrade you will ask to bring you Šnenokle.

I’m sure you’ve all tried the Floating islands. Reading my mother’s recipes I found this one and I was happy because I almost forgot about it. Another dessert which is ideal for celiacs. With just a few ingredients and very little effort, this is a dessert that can perfectly decorate your table and charms the guests.

These ingredients almost every cook has in hers or his kitchen!

3 eggs
700ml milk
6 tbsp of sugar (100g)
1 vanilla pudding
or 2 tbsp (50g) of gluten free flour (Schär Bread Mix – Mix B)
1 tsp of lemon juice

Preparation:

Pour 600 ml of milk into the pan and leave it to heat. While milk is heating, whisk 3 egg whites with 3 tbsp of sugar and 1 tsp of lemon juice in a solid whipped cream. When milk starts to boil, take the whipped cream with a spoon to create an islands and gently put them into the milk. Cook them for 2 minutes on both sides, then remove them and arrange into a bowl in which you plan to serve the dessert. Filter the remaining milk into the other pot and leave it on a heat. Pour the pudding (or 2 tablespoons of flour) in the bowl with 100ml milk, 3 tbsp of sugar and 3 yolks. Mix them together and then pour the mass into the milk pan. Stir it on the medium heat until it begins to thicken. Put the cream over “islands” and leave in a cool place to cool down.
You can decorate portions with chocolate crumb.
