Chocolate is always in.
No matter if it is raining or snowing outside … there is never enough of chocolate!
Choco lava cookies are soft and crispy outside with an amazing chocolate cream inside. Roasted hazelnut in the middle makes every bite unique. This recipe is not one of the easiest or fastest, but it is worth of every minute spent in kitchen. If you want something really delicious and special then be patient and let’s get on work:
Cream:
50 ml whipping cream
100g chocolate
100g Nutella
2tbsp cocoa powder
Biscuit:
200ml whipping cream
1 tsp vanilla bourbon sugar
1 tsp vanilla extract
1 egg
100g sugar
80g butter
2 tbsp cocoa powder
350g Schär Bread Mix – Mix B flour
+50g hazelnuts
Method:
Make the cream first. Heat the whipping cream, add chocolate, Nutella and cocoa powder and stir until you get smooth cream then leave it to cool down.
Roast the hazelnuts and leave them to cool down.
To make the biscuit put all ingredients in a bowl and knead until you get soft non-sticky dough. Divide the dough on small pieces (about 25g each). Roll out each peace, fill it with cream (around 7g), put one roasted hazelnut in the middle and pin sides together to make a ball.
Bake cookies for 20 minutes at 210ºC. You can leave it to cool down or you can try them while they are still hot. It is up to you 🙂
