Gluten free banana bread

A few years ago I found out that banana gives amazing softness to the dough. Since then I use it almost in all kinds of sweet dough. It is a really great fruit which you can use in many different ways .. puddings, cakes, muesli, cookies … you can eat it for breakfast, dessert, as a snack .. or you can make the banana bread! 

In a 100g amount, bananas supply 89 calories and are a rich source of vitamin B6, providing 31% of recommended daily value. 

Banana bread is easy and fast dessert which you can eat for few days. One more great thing is that you can make it during a whole year. In summer it goes great with ice cream, and during cold winter days you should try it with cup of hot chocolate. 

For my banana bread recipe, you will need:

2 bananas
2 eggs
100g honey
100ml yogurt
1tsp baking powder
10ml vanilla extract
1tsp vanilla sugar
100g dark chocolate
200g Schär Mix C – Mix Pâtisserie flour
100ml avocado oil (you can also use sunflower oil in a case that you don’t have avocado oil)

How are you going to make it?
Very easy!

Mash the bananas and whisk it with the eggs. Add yogurt, honey, vanilla extract, vanilla sugar, baking powder, oil and mix everything well. Chop the chocolate and add to the mixture together with the flour. Grace the bread mold and add the batter. Bake for 30 minutes at 200Cº.  Serve it with vanilla ice cream or cup of hot chocolate!
