I am thinking about sweets a lot these days. That is the reason why I am posting much more sweet recipes. Because I am a big fan of sweets, I am trying to make something “not to much sweet” from time to time. Everyone asked me is this sweet or salty cookie. That can tell you a lot of this cookie. It is definitely not one of those sugar bombs recipes. I must admit that they really have a little confusing look.
During the autumn and winters days, I have roasted pumpkin in my kitchen very often. It is some kind of snack in our house. You can make really a lot of different recipes from this amazing vegetable. It already replaced potato and it is on a good way to replace chocolate pudding, which is one of the favorites in our house. If you have left a baked pumpkin that you are sure no one will eat, try this recipe and believe me the next day you will have to bake more.
- 400g roasted pumpkin
- 1 egg
- 100g butter
- 100g sugar
- 200g Mix It Schär flour
- 200g ground roasted almonds
- Bake the pumpkin, than mesh it with butter, egg and sugar. Add flour and almonds and make a very soft dough and leave it in a cold place to cools. Make sa small cookies and bake for around 30 minutes at 220ºC.
