Bruschetta with avocado and anchovy

 

A light appetizer or a great solution for evening gathering with friends ..
It can be both one and the other!

Bruschetti are a very decorative dish, which is why they are popular at various parties, receptions, private gatherings. The combinations of ingredients for the preparation of the Bruschetti are inexhaustible, and most of them are very simple. Most classical Bruschetti are made with olive oil, fresh tomato and basil. Can it be simpler?

This time I decided to make Schär baguette bread baked in olive oil with my favorite avocado cream. The recipe is simple and very tasty, so let’s get to work!

Ingredients:

Avocado cream

1 Avocado
Zest of one whole lemon
100g Feta cheese

Bruschetti

1 Schär Baguette bread
100ml Olive oil

Sprinkle with roasted anchovy or caviar.

Avocado cream is a mixture of fresh avocado, feta cheese and lemon zest. Put all ingredients in the blender and mix it well. This cream can be covered in a refrigerator for two to three days, but it’s the most tasty when eating fresh.

Cut out Schär baguette or any other bread that you have in the house on small slices and soak each one in olive oil, then bake in the frying pan on both sides until it get golden. In the same dipping as you bake bread, roast a couple of anchovy, which you’ll use later to season each piece of Bruschetti.

Instead of roasted anchovy, you can put the caviar.
